Hot cocoa is something that is so comforting on cold mornings. I have always loved hot cocoa or hot chocolate. I was always taught to call it hot chocolate. I can remember as a young girl my grandmother Olene would make this for all of us on cold mornings before school. It was such a welcoming treat before heading off to catch the bus for school. This recipe can be a little tricky because you have to let the gelatin set enough to where you can layer it, but make sure that it hasn’t set too much as well. If you’re not quite sure how to go about that you can test a little in a small dish til your happy with it. This one is definitely worth the hassle though! I found this recipe for a peach pie that sounded really tasty. Since fresh peaches were out of season I decided to give nectarines a try! This pie just looks so inviting to eat and smells sweet. The nectarines give the pie a lot of sweetness, but the crust and a little whip cream help to tone that down!

When I first started making this cake I had no idea how sweet it would be. I know that maple syrup, in general, is pretty sweet, but this is a very non-sweet, moist, and spongy cake. The whipped cream and berries are a perfect addition to go alongside the cake. This is something that I could eat as a snack or even breakfast.
