  • Combine dry ingredients in a mixing bowl and whisk until all ingredients are evenly distributed.
  • Add wet ingredients to dry ingredients and continue mixing with a whisk until batter is smooth. The consistency should be similar to pancake batter. Using seltzer water will give fritters a crispier consistency when frying similar to funnel cake. Set aside once done mixing.
  • Slice bananas into quarters, approximately 2 inches in length. In a deep pan, wok, or fryer heat oil to medium - medium-high, approximately 350 degrees F.
  • Dip bananas in batter. Make sure to completely cover the entire banana. Using a skewer will allow you to handle bananas easier when transferring to the oil
  • When oil has reached proper temperature place battered bananas in and fry until golden brown. Place cooked fritters on a cooling rack or on paper towels to drain excess oil
  • Serve warm. You can spruce it up by topping with any of your favorite toppings like powdered sugar, fresh fruit, or whipped cream! You can also dip these in honey, melted chocolate or caramel, or any flavor syrup of your choice!
