Beef Tomato Fried Rice

This is good as a side dish to an oriental meal or by itself as a meal.

  • Rice
  • Marinade

    Marinade
  • Put marinade ingredients together in bowl or Ziploc bag, mixing well until cornstarch has dissolved, add meat, marinate at least 20 minutes.
  • Rice
  • Place water in pot, bring to boil, add rice, stir, cover, set temperature to simmer/lowest setting and simmer for 20 minutes.
  • Once rice is done, take off heat and allow to get cold I'll often make the rice the night before or I'll put it in the freezer stirring it regularly until cold but not frozen .
  • Putting it all together
  • Heat oil in large pan or wok over medium heat, pull meat from marinade and add to pan. Fry until brown on all sides, about 10 minutes. Do not discard marinade.
  • Add peas about 1/2 way through browning meat so they have time to warm and their water will help keep the meat from sticking.
  • Add yellow onion and fry until nearly translucent.
  • Add rice and stir all together. Continue stirring and moving around pan so rice doesn't stick and has time to warm thoroughly.
  • Once rice is warned through, about 5 minutes. In a bowl add eggs and scramble stir. Push everything to one side of pan, add eggs to pan and quickly scramble.
  • Add tomatoes
  • Stir all together with soy sauce and meat marinade.
  • Top with green onion slices to serve.
