Cabbage Bell Pepper Rolls & Deconstructed Version

I grew up eating cabbage rolls.  It was something I always loved when my momma would make them.  I decided to put my own twist where I combined stuffed bell peppers in with the cabbage rolls.  I also took the extra cabbage and with the remaining meat mixture decided to make a deconstructed cabbage roll casserole.  Which is really easy to make and it will finish off the leftover cabbage that you have.

  • Preheat your oven to 350 degrees.
  • In a large pot bring to boil water. Blanch the cabbage leaves in boiling water for 60 seconds. Put in a bowl that has ice water in it to stop the cooking process. Repeat this process for all the big cabbage leaves.
  • Repeat the above for the bell peppers. Remove the cabbage leaves and the bell peppers from water and set aside.
  • In a separate bowl, mix hamburger meat, onions, garlic, salt, and pepper, and the eggs, rice, and cheese. Mix this very well to combine all the ingredients.
  • Add a thin layer of tomato sauce to the bottom of the casserole dish.
  • Take a cabbage leaf, and add some of the meat mixture, then top with a slice of bell pepper, and then another layer of the meat mixture. Roll the cabbage in to a roll. Place in the pan that is prepared with tomato sauce. Make sure to place the cabbage roll seam side down. Once you have done this process to all the cabbage leave, top with more tomato sauce. Bake in the oven for 40 minutes. Remove from oven and serve with the deconstructed cabbage roll casserole.
  • Deconstructed cabbage casserole
  • Take the remaining part of the cabbage and dice into a medium dice. You will mix this in with the meat mixture.
  • Add the remaining 16 ounces of tomato sauce and stir into the cabbage mixture. Then place in to a prepared casserole dish. Bake for 30 minutes at a 350 degree oven. Serve with the cabbage rolls. Enjoy.

Notes

I wanted to show you how you could make cabbage rolls and stuffed bell peppers into one fabulous dish.  I also wanted to show you that you could take the leftover meat mixture, cabbage, and make a deconstructed cabbage casserole. This dish would be great for lunch, dinner or even pot lucks.  You just need to remember to adjust the seasoning to your liking.  You could make it spicy by adding pepper flakes or hot sauce.
