Chicken Marengo

Chicken Marengo is an updated version of chicken and gravy. It is an amazing dish to try. It’s excellent for leftovers or for lunch for your spouse or yourself as well. It heats up beautifully in the microwave.  I hope that you enjoy making this dish for you and your family.

  • Add salt and pepper to flour, dredge chicken in mix, add oil to a pan over medium-high heat and fry chicken until golden
  • Add mushrooms, tomatoes, any other veggies you've decided to add and wine to pan and heat through bringing to a simmer.
  • With remaining flour mixture, add a little bit of water and stir until smooth. Add to the pan to thicken the sauce.

Notes

I made this healthier by baking the chicken instead of frying it.  I made a roux instead of using the flour from the frying to make this a lighter more healthier version of the dish.  I did omit the tomatoes due to my family not liking the tomatoes.  I did add some peppers to kick up the spicy side of the dish.
