For this recipe, I was making Cubano sandwiches. I always smoke my ham just because you can do so much with it. Once smoked, I cut a portion off and grated it up for this recipe. I also did the same with a roasted Mojo Pork shoulder.
Ham and cheese elevated to an entirely different level! This is for the most committed appetizer lover. If you bring this to the party, no one will know the dedication that it took to make tastebuds jump like this however everyone will want to know what party you’re cooking for next.
The nice part about this recipe is that you can either cook it in a pie tin/plate (this is the option in the picture). You could also cool it overnight and serve it chilled.
Serve with anything and everything from your favorite cracker of choice, to toasted bread, soft pretzel balls, all the way to any vegetable you want. So many possibilities!

- Once you have the mojo pork, ham, gouda, pepper, paprika, and swiss finely grated mix in a large bowl
- Add softened cream cheese and chives mix till combined
- **COLD OPTION** If you are going to chill this overnight add cheddar mix, mold into a log shape, wrap it in plastic wrap, and chil overnight till ready to serve.
- **HOT OPTION** Pre-Heat oven to 450, place this mixture into a glass or aluminum pie tin. Spread cheddar on top. Cook for 20 mins until all cheese has melted. (If you want to add a little crisp broil for an additional 5-10 mins till cheddar cheese has a nice color, don't over burn)
