This cake became a favorite of mine to make when I lived in upstate NY 2005-2009. The fall apple harvest gave me so many apple options that I’d mix and match different types of apples which always made this cake different. I’ve had a lot of fun making it over the years.

- Place diced apples in a bowl and add the eggs, 1 cup of sugar and the vanilla then stir
- In another bowl combine the other 1 cup of sugar, baking powder, baking soda, and the spices including the salt and mix these well.
- Add the flour to the spice mixture and combine well.
- Add the apple mixture to the flour/spice mixture and stir well to combine.
- Pour into a 13x9 and back from 50-60 minutes at 350, until a toothpick inserted comes out clean.
