Fudge Cake Brownies

This recipe is a good one for anyone that loves a chewy fudge brownie. The walnuts are optional, but I love the crunchy texture and flavor they bring to the brownie. Typically when baking brownies you expect to use an oven. In my case, my oven quit working and instead of waiting for it to get fixed I decided to use my instant pot to bake these! I’m including baking times for oven and the instant pot in this recipe in case anyone wants to give it a try in theirs. I personally love using the instant pot for my baked goods. They always come out so much more moist than in the oven thanks to the steam!

  • Over a double boiler, melt the chocolate and butter until they are completely blended together. Remove from heat and place into the bowl of your stand mixer.
  • On low, slowly add the sweetened condensed milk. Once fully combined, scrape down the sides of your bowl.
  • On low, slowly beat in the eggs one at a time, until fully combined.
  • Sift together the flour, salt and baking powder. Gradually add into the chocolate mixture. Scraping down the sides of your bowl and mixing well in between each addition.
  • Stir in the vanilla, then gently fold in the walnuts.
  • Spread the batter into a well greased 13x9 inch pan. Bake at 350 degrees for 25 to 30 minutes or until done.
  • Remove from oven and let cool completely before slicing.

  • Pour 1 1/2 c of water into the bottom of your instant pot. Place trivet. Form a piece of foil to lay your pan/bowl on in the instant pot for easier removal. Pour batter into a greased springform pan or pan. Place on the trivet and cover with the excess aluminum foil. Place lid on instant pot and set to seal. Set instant pot on manual for 50 minutes.
  • Let natural release for 10 minutes after cooking before switching to manual release. Remove pan from instant pot and let cool before slicing.
