Instructions
- Sift dry ingredients in a bowl
- In another bowl, whisk yogurt, lemon, and eggs.
- Fold flour mixture into wet ingredients then fold in melted butter,
- Portion into muffin tin and bake at 375 for 25 minutes until a toothpick inserted comes out clean Syrup
- While baking simmer sugar and lemon juice until thick syrup consistency.
- Pull muffins from the oven when done, drizzle with syrup and let rest 5 minutes then pull from tins and allow 10 min to cool on a rack before serving.
