Lemon Poppy Seed Muffins

These are super lemony 🙂 I used baker’s measures so you’ll need a scale

  • Sift dry ingredients in a bowl
  • In another bowl, whisk yogurt, lemon, and eggs.
  • Fold flour mixture into wet ingredients then fold in melted butter,
  • Portion into muffin tin and bake at 375 for 25 minutes until a toothpick inserted comes out clean
  • Syrup
  • While baking simmer sugar and lemon juice until thick syrup consistency.
  • Pull muffins from the oven when done, drizzle with syrup and let rest 5 minutes then pull from tins and allow 10 min to cool on a rack before serving.
