Squash Casserole

Squash casserole isn’t something that I had growing up as a kid.  So to say I was excited to cook this dish, was an understatement.  The mishaps that I had during the cooking was I accidentally left out the eggs and worcestershire  sauce.  I didn’t realize it until after the casserole was in the oven.  I felt really mad at myself, but it still turned out delicious.

  • Bring the vegetables to a boil in a large pot in the stock.
  • Cook until the vegetables are tender.
  • Preheat the oven to 350 degrees.
  • Drain the vegetables and then mash them.
  • Combine squash with butter, salt, pepper, saltine crumbs, egg, and Worcestershire sauce
  • In a grease 2-quart casserole, layer squash mix and cheese, finishing with a cheese layer
  • Place the casserole in the 350 degree oven and bake it for 30 minutes. This might take longer depending on your oven and how it cooks. Remove from the heat and serve hot.

Notes

As I was doing this recipe and I did make a few mistakes, I realize that the dish did turn out.  It was still a casserole, and it was layered, and had a really amazing taste.  It was still a squash casserole but with just two ingredients missing.  Sometimes you will make these mistakes in cooking.  You just got to go with the flow and hope that it turns out amazing.  If not learn from it and try it again.  You could add a little bit of heat by adding some red pepper flakes to it as well.  You just need to watch the levels depending on whom you are cooking for.
