For The Love of Food and Making Great Memories
My name is Champion and I reside in Alabama. I'm currently studying to become a pastry chef and will soon be graduating. Creating formulas, sketching, making and decorating cakes is my happy place. Making cakes is my passion and it brings me so much joy, so much so that I don't consider it work. I have even come to enjoy baker's math (ie: converting formulas, as well as, figuring out the menu pricing, and cost per portions).
This is my 4th attempt at becoming a pastry chef and I have finally made it to the finishing line. This has been a dream for me since I was 18 years old.
My desire is to specialize in 3-D cakes. However, due to my location there is not a demand for 3-D cakes. Therefore, in order to stand out from the competition, I've learned to adapt to the demands of my community by putting my own spin on current formulas, as well as, developing my own. I also customize formulas to meet the needs of my clientele whether they're requesting heirloom cakes or custom cakes.
I would like to be the one to introduce my community to 3-D cakes while putting a spotlight on another form of edible art.
This cake is super moist and packed with flavor! The orange and pineapple flavors marry well together to the point that the citrus and tropical flavors truly become one. Here it is glazed by an Orange Infused Cream Cheese Glaze and topped with Candied Orange and Pineapple Slices

The candied fruit slices are sweet, but not overly sweet and the orange rinds are not bitter. These candied fruit slices are a welcome addition to any dessert! Here they are used on an Orange & Pineapple Poppy Seed Cake.
This frosting can be difficult to work with and looks much thicker in the photo than it actually is. It has a great flavor and is fit for many styles of cake. Here it’s used on Pecan Maple Cake
If you love maple syrup and pecans then you will love this cake! This cake is loaded with pecans and maple syrup. This is a very rich and dense cake. It would be a good dessert for a holiday season like Christmas.
This pie is delicious and fairly easy to make! The Pineapple – Glazed Apple Pie is a very different spin on the old American classic Apple Pie. With this pie the only thing you bake is the pie crust. The apples are juicy and tender and the pineapple – glaze is very sweet, all layered on top of a golden brown, flaky crust.
Don’t sleep on this Zucchini cake!! It is unbelievably good! You would never suspect that there’s vegetables in this cake. It’s so moist, light, flavorful, and simply delicious! Since this cake is so light, it doesn’t have any frosting and it’s not overly sweet you could even have a slice with a cup of tea for breakfast. However you see fit to eat it, you will enjoy it!!
The flavor and aroma of these cookies transports me right back to my Mom’s kitchen as a little girl during the Thanksgiving and Christmas holidays. When my Mom would be pulling out all the stops to make sure everybody had all of their favorite goodies during the holidays. These cookies have crisp edges and they’re chewy in the middle. Since these cookies are easy to make they’d make a great afterschool snack to have waiting for the kids when they get home!
