Chicken (Veal) Marsala

I don’t eat veal so I turn all veal recipes because I know where veal comes from and it breaks my heart. I turn all veal recipes into chicken because of this and also chicken is a healthier and less expensive option.

Kale, Beef and Potato Soup

An interesting combination for a nice hearty soup. Something to enjoy on a cold day or to share with family. A hearty flavored soup. This dish is originally a Portuguese dish, but instead of using Linguica (Portuguese sausage), it became a more American dish using beef tips(beef tenderloin chunks). When I think of beef stew, I think of low and slow in a crockpot for many hours. This recipe gives the same tender and savory comfort meal without the long hours. Cabbage Rolls

Pot roast has always been a favorite dish of mine. I thought of baked cabbage and wanted to put something delicious inside of it. So I decided to put the pot roast inside of the cabbage and made rolls. Thought it would look better and taste better with a sauce to go on top. Which I thought turned out great.

Don’t Peek California Beef Stew

This is a delicious, stick to your ribs stew that would be perfect on a cold winter night!  This recipe was very simple.  I wanted to jazz it up, so I added fresh ingredients.  I also wanted to make sure it wasn’t too rich, so I added carrots for the contrast.   Still a very easy preparation and cook. Tabouleh

This stuff makes me so happy. Simple, savory, healthy, and so yum. Bulgar wheat can be found raw or processed. Raw takes longer,  obviously, so plan for that if you decide to use it. Otherwise, there isn’t a whole lot to say about this one, other than have fun with it!!! Great as a side dish, like the picture, or as lunch, which is my choice!!!! C’mon, let’s eat.
