Apricot-Coconut Cookie Bars

If you enjoy gooey delicious fruit bars, this recipe is for you. I’ve added ground oats to the pastry, which gives it a slightly heartier consistency, mixed in apricot preserves with the chopped apricots to spread on top of the baked pastry, and added sliced almonds to the coconut mixture to give the bars a little crunch. To make these bars just a little more special, I’ve topped them with drizzled white chocolate, diced apricots, and chopped sliced almonds. Your family and friends won’t be able to resist!

Fondant Easter Eggs

I do not consider myself artistic in any sense of the word, but I found decorating these fondant Easter eggs a lot of fun. This would be a tasty treat to make for a gathering or with the family, letting everyone decorate their own egg any way they please. There is no right or wrong way, have fun with it and enjoy the fruits of your labor!

Chocolate Caramels

Chocolate and Carmel don’t belong together, said NO ONE ever. These little Caramels are extremely delicious! The creaminess of the chocolate and caramel gives it a fudge like consistency, and it is divine. Give them a try, you won’t be disappointed!

Peanut Butter Cookies

I wanted to add additional peanut butter flavor to these cookies, so I added peanut butter chips to the batter. I scooped the dough using a small scoop, which was fun and helped keep them all the same size. When the cookies were done, I drizzeld melted peanut butter chips on top with a little sprinkeling of chopped peanuts. Delicuous! This recipe made about 2 dozen cookies.

Chocolate Coconut Drops

These little drops of heaven remind me of Almond Joys, except without the almonds. Although, you can surely add them to give a nice crunch. The soft texture of the inside of the drops pairs well with the crunchier exterior, or add your choice of nuts/seeds for an even better combination! It’s fast, it’s easy, it’s delicious!

Frosted Strawberries

Creating frosted strawberries was a first for me. I found the mixture to be pretty wet and was wondering how I was going to form strawberries out of it.  I took a scoop of the mixture and rolled it into the extra strawberry gelatin, this firmed it up enough to form a strawberry. Using different-sized scoops, helped to make different size strawberries; some were more successful than others. To display the frosted strawberries, I made a lemon layer cake and used the strawberries as decoration.

Molasses Taffy

This was another fun and easy recipe to make.  The final product is smooth with a rich molasses flavor. Give it a try and see what you think!

Apricot Coconut Balls

No-bake snacks and desserts are great to keep on hand for busy days and hungry kids (or husbands).  This one is great because it is quick and simple, with only 3 ingredients.  The dried apricots are just tart enough to balance out the sweetness of the coconut and condensed milk. Have fun and dress them up with powdered sugar or drizzle with melted chocolate.  YUM!

Triple Treat Fondant

Working with fondant is one of the easiest yet rewarding items I have made in my kitchen. Before this, I had never worked with fondant and assumed it would be hard to make and even harder to work, so imagine my surprise to find that not only is it super easy to make (and very cheap) it is so fun to work with! remember kindergarten making food with play dough? Yep pretty much the same idea( except this dough is edible)  I think the best part for me besides bribing my twins to help me was adding the flavoring (we …
