Andre’s Cornish Hen with Wild Rice and Mushroom Stuffing

Hi there this is one of my new favorite chicken dishes, with a very easy to do recipe I hope anyone that tries it enjoys it as much as I do.

  • Melt butter, jelly, add Worcestershire, dry mustard, and white wine vinegar simmer 10mins.
  • Place chicken in baking pan breast side down glaze chicken then put in 400* oven for 20 minutes.
  • Turn chicken glaze breast and place back in the oven for 40 minutes glazing or basting often.

  • In a large saucepan combine chicken stock, chopped mushrooms, celery, onion, and rehydrated apples then bring to a boil.
  • Add wild rice and simmer for an hour or until rice is tender
  • Make sure the rice has a good cup of water left combine with the dried bread let sit for 5-10 mins stuffing should be fluffy and moist.
