A delicious twist on a holiday classic, brown rice stuffing and roasted Cornish hen.

Instructions
- In a saucepan add 1 cup of brown rice to 2 cups of boiling water, turn heat to simmer, cover, and cook for thirty minutes, do not stir.
- Preheat oven to 350 degrees and on a sheet pan place the Cornish hen and salt and pepper. Place in oven. Cook for an hour or until to temperature.
- In a skillet add the sausage and cook until brown, drain, and reserve 3 tablespoons of drippings.
- In the same skillet, add the onion, celery, cranberries, nuts, sage. Salt and pepper to taste. Cook until onions are translucent and celery has softened some.
- Add the cooked rice and sausage to the pan and mix.
- Plate the stuffing and the hen.
