Instructions
- Combine the flour, baking powder and oil
- Save 2 tablespoons (30g) for later
- Combine first sugar, egg, and liquid to the first ingredients.
- Mix vigorously for one minute (by hand)
- Spread mixed batter into a well-greased 9-inch pan
- Drop spoonfuls of drained/crushed fruit over the batter
- Combine the second sugar, cinnamon, batter (saved from the first step), and butter
- Blend mixture with a fork until crumbly
- Scatter sprinkle mixture over the top of the cake
- Bake in a 400-degree oven for 25 to 30 minutes.
