French Bread

  • Add flour, salt, yeast, and water to a mixer, mix until it's cleaned up from the sides. Then continue mixing for a couple more minutes until it is climbing the hook on your mixer.
  • Let it set in the bowl under a towel for an hour then stretch it and fold it all around.
  • Let it set in the bowl under towel another 30 minutes.
  • Shape it into a round and let it sit another 20 minutes under a towel.
  • Shape into a loaf. Place it into a 450-degree oven. Add ice in an oven-safe bowl to the oven for the first 10 minutes of baking to make steam. I tend to use a pie plate on the lowest rack of the oven with the bread on the next rack up.
  • Bake about 25 minutes until all golden and crunchy looking.
