Instructions
- Melt butter over double boiler
- Whisk in 1 tablespoon of flour at a time until smooth
- Slowly whisk in scalded milk until smooth with no lumps
- Stir in salt and cheese until fully melted, blended and smooth. Remove from heat and allow to cool slightly.
- Beat egg yolks until light yellow in color, almost like lemon, add the above mixture to the bowl with the egg.
- Add ham and dry mustard. Allow mix to cool some.
- While above is cooling, beat the egg whites to firm peaks. Do not beat until dry, you still want them moist.
- Add spinach and onion to cream mixture
- Fold in egg whites, do not stir or beat these in
- Pour into souffle dish and bake at 375 for 35 minutes.
