Ham and Spinach Souffle

  • Melt butter over double boiler
  • Whisk in 1 tablespoon of flour at a time until smooth
  • Slowly whisk in scalded milk until smooth with no lumps
  • Stir in salt and cheese until fully melted, blended and smooth. Remove from heat and allow to cool slightly.
  • Beat egg yolks until light yellow in color, almost like lemon, add the above mixture to the bowl with the egg.
  • Add ham and dry mustard. Allow mix to cool some.
  • While above is cooling, beat the egg whites to firm peaks. Do not beat until dry, you still want them moist.
  • Add spinach and onion to cream mixture
  • Fold in egg whites, do not stir or beat these in
  • Pour into souffle dish and bake at 375 for 35 minutes.
