This frosting can be difficult to work with and looks much thicker in the photo than it actually is. It has a great flavor and is fit for many styles of cake. Here it’s used on Pecan Maple Cake

- Beat the egg whites until they form stiff peaks.
- When the egg whites have reached stiff peaks, while beating the egg whites drizzle cooked syrup into the egg whites and continue to beat the mixture until it cools and loses its gloss. To Frost Cakes That Have Been Frozen For Frosting Prep
- Take cakes out of the freezer. On a flat surface, using a serrated knife trim off the tops of the cakes. Next, place cakes on a turntable to evenly tort them into layers, using a serrated knife. Then fill 3 of the cake layers with the frosting.
- After adding the last layer, add a crumb coat to the top and sides of the cake. Then chill in the fridge for 30 minutes and let the crumb coat set before adding the final coating of frosting.
