I really enjoy a rich and creamy mousse and this recipe delivers. This is a quick and easy recipe that you can throw together the same day or let it chill overnight. It is packed full of flavor and the chocolate gives you a nice crunch and pairs so well with the mousse. It’s a sweet treat for those that don’t like a lot of overpowering sweetness!

- In a small bowl, sprinkle gelatin over the cold water. Let sit for 5 minutes.
- Over a double boiler, beat the maple syrup and eggs. Cook for 10 minutes while stirring constantly. Add the gelatin and cook until dissolved.
- Remove from heat. Cool over an ice bath until the mixture is cool but not yet set, stirring occasionally.
- In stand mixer, whip the whipping cream until stiff peaks form. In 3 additions, gently fold the cream into the cool syrup mixture until smooth and blended well.
- Pour into 3 8 oz ramekins or mold of choice. Cover with plastic wrap and refrigerate for 3 hours or until set. Garnish with semi sweet chocolate before serving.
