Stuffed Pork Roast

I love stuffing chicken breasts, roasts, most anything. Not only does it add a layer of flavor but it looks really pretty on a plate. Here spinach, onion, eggs, ricotta cheese and, Italian sausage come together to make simple pork roasts truly divine.

  • defrost spinach, and using a strainer and paper towels, push all the water out of it til it's as dry as you can possible get it
  • slit side of pork roast until it's butterflied open, don't slice all the way through it
  • on one side of the roast layer the spinach, ricotta, sausage, eggs, and then the onion
  • fold the other side oven then tie the roast with twine
  • bake uncovered without a roasting rack at 350 for 1 1/2 hrs. Allow to rest 10min before slic
