Zucchini Cake

As a child, I remember my family making banana bread.  Until recently I had never really heard of zucchini cake.  I love the vegetable, but I never knew that it could be made sweet as well.  I loved the entire process of making this cake.  I loved the new cream cheese frosting as well.  Everything is really simple to make.  I would encourage you to try this recipe.  It would also be really good as cupcakes.

  • Take the eggs and add them to your mixer and beat until combined. Next add your vegetable oil and mix in to the eggs until combined well.
  • Next you need to add the sugar and mix well. Add the zucchini and vanilla next and mix well.
  • Dry Ingredients
  • Preheat the oven to 350 degrees.
  • Sift together in a bowl the all purpose flour, baking powder, baking soda, cinnamon and salt.
  • Add the sifted dry ingredients to the wet ingredients and mix well. I added the dry mixture slowly to incorporate it with out sending flour everywhere and making a huge mess.
  • Fold in your chocolate chips and walnuts. Mix until just combined. Add the cake mixture to a loaf pan sprayed with non stick spray. Bake for 40 to 50 minutes. In my oven, it took one hour. Check on it at 40 minutes to see if when you stick a toothpick in the center if it comes out clean. Once cake is done, remove from oven and cool completely in the pan. To get it ready to frost.
  • Cream Cheese Frosting
  • Cream the cream cheese, butter, and powdered sugar together really well. I did the adding of the powdered sugar slowly to avoid in messes.
  • Remove the cake from the pan and frost it. I added some additional walnuts and chocolate chips to the top of the cake as garnishment. You can skip this if you wish.

Notes

If I could do one thing different with this recipe, it would be with the frosting.  I would add a teaspoon of vanilla extract to the frosting and maybe a pinch of salt.  I really don't like over sweet frostings.    The cake was super moist and amazingly delicious.
