Rump Roast with Roasted Celery, Carrot and Acorn Squash Soup

This dish was fun, but a little challenging when it came to presentation.  I wanted the traditional flavors but needed, in my opinion, to stay away from the traditional plating.  I will admit, it’s been some time since I made a roast, but it sure reminded me of family, friends and was fit for the season.  Enjoy!

Tuna Wild Rice Bake

Spinach Soup

This recipe was inspired by an article from a newsletter from a local power company in the 1970’s. I aimed to lighten and brighten the recipe as it seemed very heavy and over shadowed the spinach. I love using fresh produce when possible and this vibrant green soup was well received by the pickiest of family members. Filled Coffee Cake

More of a breakfast cake than a dessert in my eyes, filled coffee cake is my go to “chaser” for mornings when I need more than a second cup of coffee. If you can resist eating the entire pan, this cake freezes well if wrapped tightly to eliminate as much air as possible. It’s easily reheated and is sturdy enough to withstand a dunk or two into your cup for a double punch of coffee flavors. This Dessert was very creamy and sweet. If I were to make it again I would make it with out the ice cream and use whipped cream instead but it was nice to share with my family

Cottage Cheese Egg Omelet

I have never heard of having cottage cheese with scrambled eggs before.  This dish was from the 60’s or 70’s time frame.  I decided to make it into something totally different.  I made this into an egg omelet.  It was delicious.

Homemade Hot Cocoa

Hot cocoa is something that is so comforting on cold mornings.  I have always loved hot cocoa or hot chocolate. I was always taught to call it hot chocolate.  I can remember as a young girl my grandmother Olene would make this for all of us on cold mornings before school.  It was such a welcoming treat before heading off to catch the bus for school.  I made this a different way than what my grandmother made it.  I hope you enjoy this recipe.
