- Wash and dry fish on a paper towel
- Combine salt, corn starch, and soy sauce
- Next, stir in bouillon cube dissolved in boiling water; set aside
- Heat 1 tablespoon of oil and butter in a non-stick skillet
- Add fish filets and brown quickly on either side; set aside to keep hot
- Wipe out the skillet with a paper towel
- Add the remaining oil to the skillet
- When hot add the onions, celery, water chestnuts, and mushrooms
- Cook on high heat until crispy tender (do not overcook)
- Add soy-bouillon mixture and cook, tossing to mix, until vegetables are coated and liquid thickened
- Carefully stir in fillets
- Serve immediately
