Mediterranean Green Bean Salad

A super flavorful and healthy side dish that pairs well with just about any sandwich or grilled protein. This dish is also chock-full of nutrients and probiotics. This recipe can easily be altered by adding in items such as artichoke hearts, olives or a cured meat to make it a one dish meal.

  • Trim the green beans then cut in half and slice lengthwise down the "seam"
  • Halve the whole bell pepper then slice into thin strips. Cut them in half again.
  • Slice onion thin and chop sundried tomatoes.
  • In a large sauce pan, bring salted water to a full rolling boil
  • Prepare a large bowl of ice water (an ice bath) to cool the beans
  • Add green beans to boiling water and allow to cook for about 3 minutes. Do not over cook, the beans are supposed to be crisp
  • Immediately drain the beans in strainer and submerge in ice bath
  • once cooled drain in collander and pat dry with paper towels
  • In large bowl mix beans, peppers, onions, tomatoes and feta cheese.

  • In small bowl add all sauce ingredients
  • Add sauce mixture to bean mixture and combine.
