For this recipe I added a lot of carrots and potatoes because my family eats a lot of them, feel free to add more or less to suit your family’s needs. This roast is an easy one-pot meal that will feed your whole family. Growing up I ate a lot of pot roast as it was something easy for my mother to toss in the crockpot or on the stove to cook while she helped me and my sisters finish any schoolwork we had for the day. I remember the delicious smell wafting through the house as we sat doing our school waiting for mom to check it one last time and give the call of “dinners ready girls!”. BBQ Sauce
- After dicing the onion, combine all ingredients in a blender or food processor and blend until smooth (or desired consistency). Set aside. Roast
- In a dutch oven on medium-high heat, melt your butter and sear your roast on all sides. Turn the heat to low and cover the roast with your BBQ sauce, add the bay leaf. Cover with the pot's lid and cook on low for 1 1/2 hours.
- Add in your carrots and potatoes and add beef stock until just covered. Simmer for another 1 to 1 1/12 hours until potatoes and carrots are tender and meat is tender and cooked through.
