BBQ Beef Pot Roast

Yields: 4 Servings Difficulty: Easy Prep Time: 20 Mins Cook Time: 2 Hr 20 Mins Total Time: 2 Hr 40 Mins

For this recipe I added a lot of carrots and potatoes because my family eats a lot of them, feel free to add more or less to suit your family’s needs. This roast is an easy one-pot meal that will feed your whole family. Growing up I ate a lot of pot roast as it was something easy for my mother to toss in the crockpot or on the stove to cook while she helped me and my sisters finish any schoolwork we had for the day. I remember the delicious smell wafting through the house as we sat doing our school waiting for mom to check it one last time and give the call of “dinners ready girls!”. I hope your family enjoys this as much as I enjoyed it and all the memories that came to mind while making it.
