Chicken with Curry Sauce and White Sweet Potatoes

This dish may not be the most visually appealing but it definitely does the job when it comes to flavor. I used chicken thighs, white sweet potatoes, and turnips! Great curry sauce with the perfect hint of sweetness from the sweet potatoes.

  • Heat olive oil in a deep sauté pan and sweat minced garlic and onion for 3 mins
  • Add broth and dry seasonings; bring to a boil
  • Lower heat (to low) add chicken thighs; simmer for 50 mins
  • Sweet potatoes and turnips- peel the sweet potatoes and turnip and cut into cubes
  • Boil water in shallow pot and add cut potatoes and turnips; cook for 15-20 mins or until potatoes are tender
  • Drain and serve with chicken and curry sauce
